Welcome my friends! Today, I'm making a delicious Mushroom Frittata that’s perfect for breakfast, brunch, or even a light dinner. This easy-to-follow recipe combines fluffy eggs, sautéed mushrooms, and a blend of cheeses to create a dish that’s packed with flavor and ready in just minutes. Whether you’re a seasoned cook or a beginner in the kitchen, this frittata is a great way to impress family and friends without breaking a sweat!

📝 Ingredients:
 ✓ 1 cup diced yellow onion
 ✓ 1 cup chopped baby spinach
 ✓ 1 cup cherry tomatoes – sliced in half
 ✓ ½ cup shredded mozzarella cheese – cheddar or parmesan will also work
 ✓ 1 cup sliced mushrooms
 ✓ 8-10  eggs
 ✓ ½ cup heavy cream – you can also use greek yogurt or sour cream
 ✓ 4 Cloves of Garlic, sliced
 ✓ ½ teaspoon salt
 ✓ ¼ teaspoon ground black pepper

Preparation:

1. Chop the Vegetables: Start by finely chopping the onion into very small pieces. Cut the cherry tomatoes in half lengthwise, and slice the mushrooms into thin slices. Chop the fresh spinach into small pieces.
   
2. Prepare the Baking Dish: Lightly grease the baking dish with a bit of oil to prevent sticking during baking.

3. Layer the Vegetables: Cover the entire bottom of the baking dish with the chopped onion. Spread the sliced mushrooms on top of the onions, then add the chopped spinach, and finally, layer the cherry tomatoes on top.

4. Add the Cheese: Sprinkle grated mozzarella cheese over the vegetables. If desired, you can use finely chopped cheddar or Parmesan instead of mozzarella.

5. Prepare the Egg Mixture: In a separate bowl, whisk 8 to 10 eggs with some sour cream. You can substitute sour cream with yogurt or buttermilk if preferred. Add minced garlic, salt, and pepper, and mix everything well.

6. Pour the Egg Mixture: Gently pour the egg mixture over the vegetables and cheese, making sure it spreads evenly across the entire surface.

7. Bake: Preheat the oven to 180°C (350°F) and bake the frittata for 40 to 45 minutes. When done, remove it from the oven and let it rest for 5 to 10 minutes to set.

8. Serve: The frittata is ready to serve. It looks fantastic, and the taste is even better.
