I have thin-skinned potatoes, but if you have other types, peel them first, then cut them into small cubes, about ¾ inch (1-2 cm). Finely chop the celery. For the cabbage, first remove and discard the core, then chop it into strips about 1 inch (2 cm) wide. Once the meat is tender, add all the vegetables to the pot. Don’t worry if it looks crowded; the cabbage will soften and shrink. Stir everything well, cover, increase the heat, and cook for another 30-35 minutes, or until the vegetables are tender. And that’s it, it’s ready! Remove the pot from the stove, discard the bay leaves, and taste to adjust the seasoning with salt and pepper if needed.
