Ingredients: β 5 potatoes (or 900g) β 2 cups grated cheese β 400g bacon β 2 leeks β 1 onion β 5 eggs β 3 tablespoon heavy cream β 4 tablespoon butter β 1 tablespoon salt β 1 teaspoon pepper Instructions: 1.Prepare the Ingredients: Dice the onion into very small pieces. Slice the leeks into ΒΌ-inch rounds. Cut the bacon into small pieces. 2.Cook the Potatoes: Boil the potatoes in salted water until tender. Drain and set aside. 3.Cook the Bacon & Veggies: In a frying pan, cook the bacon until crispy. Remove the bacon and leave the grease in the pan. Add the diced onion to the bacon grease and sautΓ© for about a minute. Stir in the leeks, Β½ tablespoon salt, and Β½ teaspoon pepper. Cook until soft, then return the crispy bacon to the pan. Mix well and cook for 5 minutes. 4.Prepare the Baking Pan: Use an 11-inch baking pan (or similar size) and butter or oil the inside to prevent sticking. 5.Assemble the Bake: Line up the boiled potatoes in the pan and gently smash them with a cup to cover the bottom. Spread butter over the potatoes, then add the remaining Β½ tablespoon salt and Β½ teaspoon pepper. In a separate bowl, whisk eggs and heavy cream together. Evenly distribute the leek-bacon mixture over the potatoes. Sprinkle the grated cheese on top. Pour the egg mixture evenly over everything. 6.Bake: Preheat the oven to 400Β°F (200Β°C).
