Preparing the cabbage heads: Carefully cut out the core of each cabbage head using a knife. Hold the knife away from your hand to avoid injury. Cut the core in a circle and hollow it out to a depth of about 4 cm. Remove any damaged outer leaves until the cabbage looks healthy and fresh. Repeat this process for all the cabbage heads. 2. Filling with salt: Fill the hollowed parts of the cabbage heads with salt. Use approximately 30 grams of salt per liter of water. Place the salted cabbage heads in a large container or barrel with a lid. Gently press the cabbage down to ensure it is firmly placed and to prevent it from floating when water is added. 3. Adding water: Slowly pour water down the side of the container to avoid washing out the salt from the cabbage heads. The water should cover the cabbage by about 4 cm above the topmost head. 4. Keeping the cabbage submerged: Cover the cabbage with a flat item such as a wooden board or a plate to keep it submerged. Place a heavy object on top (e.g., a bowl filled with water, a stone, or another heavy item) to press the cabbage down. 5. Fermentation: Leave the cabbage at room temperature for 15 to 20 days, depending on the room temperature. During this period, check occasionally to make sure the cabbage remains submerged and add more water if necessary. 6. Add the salt and stir slightly. Add the butter (you can use lard) and add 3/4 cup of powdered sugar. I should have chopped the walnuts at the beginning, but here it is. Chop the walnuts very finely by hand, without using a machine. Make sure to chop them as finely as possible. Then, mix the powdered sugar and butter with a mixer, and scrape the mixture from the sides of the bowl with a spatula. Add the vanilla and mix well again. Then add the flour and mix everything well. Finally, add the finely chopped walnuts and mix everything until you get a homogeneous mixture. I use an ice cream scoop for shaping, but you can use a regular spoon and form balls by hand, about 1 inch in diameter. Line a baking sheet with parchment paper and arrange the balls without worrying about them sticking, as they retain their size during baking. I ended up with exactly 28 balls, but it depends on the size you make. Preheat the oven to 350 and bake for 12-18 minutes, or until they are firm and slightly golden on the bottom. When you take them out of the oven, let them cool slightly, then roll the balls in the remaining powdered sugar and arrange them on a serving tray. Peel the carrots, trim the ends, and slice them into rounds about ¼ inch (½ cm) thick. I like to cook the cabbage with potatoes, but you can leave out the potatoes if you prefer. For the cabbage, first remove and discard the core, then chop it into strips about 1 inch (2 cm) wide. Once the meat is tender, add all the vegetables to the pot. Whether you’re a seasoned baker or a beginner, this recipe is easy to follow and will impress anyone who takes a bite! 📝 Ingredients: Batter Ingredients: ✓ 2 eggs ✓ ⅔ cup sugar ✓ ½ cup oil ✓ 1 cup sour cream ✓ ¼ cup milk ✓ 1½ cups flour ✓ 1½ teaspoon baking powder ✓ ½ teaspoon baking soda Topping Ingredients: ✓ 2 cups Walnuts, coarsely chopped ✓ ½ cup butter ✓ ½ cup brown sugar ✓ ¼ cup honey ✓ 1 teaspoon salt 📖 Instructions: Preparing the Cake Batter: 1. Next, add the sugar and mix the batter again. 4. Sift in the flour, baking powder, and baking soda. If there are any small lumps, feel free to discard them. 5. Once everything is combined, continue mixing with the mixer until you get a smooth batter. Set the batter aside and start preparing the caramel topping. Preparing the Topping: 1. Start by finely chopping the walnuts or breaking them into smaller pieces. 2. Add the butter to a pan and let it melt. 3. Once the butter has melted, add the brown sugar, salt, and honey, then cook until the mixture begins to boil. 4. Add the walnuts and mix everything well. Once the topping is ready, transfer it to the baking pan. I use a 26 cm (10-inch) pan, but you can use a similar size. Before pouring the topping, line the pan with parchment paper. Now add the prepared batter over the topping in the pan and carefully spread it evenly. Baking: 1. Preheat the oven to 180°C (350°F). 2. Bake the cake for 40 to 45 minutes or until the top is golden brown. 3. When baking is done, remove the cake from the oven and let it cool for 10 to 15 minutes. 4. Check if the cake is baked by inserting a knife into the center. If the knife comes out clean, the cake is done. If not, return it to the oven for a little more time. After cooling, place a serving plate over the pan, flip the cake onto the plate, and carefully lift the pan. The Caramel Walnut Cake looks amazing. For the final layer, reserve a bit of the filling. Fold the Crêpes hanging over the sides inward and cover with the last trimmed Crêpe. Spread the remaining filling on top and decorate with fruit. 9. Cover the cake with plastic wrap and refrigerate for at least an hour to set. Jam-Filled Crêpe Cake For a jam-filled version instead of using fruit, spread jam between the Crêpe layers. Ingredients ✓ 450 g Filo dough ✓ 160g unsalted butter, melted 11 tablespoons ✓ 2-3 sweet red apples, halved and thinly sliced Custard ✓ 1 ½ cup heavy cream ✓ ¾ cup sugar ✓ 3 eggs ✓ 1 teaspoon vanilla To serve ✓ Honey ✓ Ice cream or double cream Preheat your oven to 360° F Bake for approximately 40 minutes until the pastry is golden. ### Method #### Preparing the Fillo Pastry Before starting, take the Fillo Pastry out of the fridge and let it come to room temperature while still in its packaging. Preheat your oven to 360°F (fan forced). #### Assembling the Pastry 1. Grease a 12 inches round baking dish with butter. 2. Brush one sheet of Fillo Pastry with butter and lay it in the baking dish, ensuring it covers the edge of the pan. Fold any overhanging pastry back into the dish to form an edge. 3. Repeat with three more sheets of Fillo Pastry, rotating each sheet slightly to cover all the sides. 4. Lay one sheet of Fillo Pastry on your workspace with the long side facing you. Brush with butter. 5. Place another sheet of Fillo Pastry on top and brush with butter. 6. Using your fingers, fold the pastry into a concertina pattern. 7. Coil the folded pastry into a spiral, ensuring it is not too tight, and place it in the center of the baking dish. 8. Repeat with the remaining Fillo Pastry, placing each spiral around the center until the dish is full. 9. Slot the apple slices between the layers of pastry. #### Making the Custard 1. In a bowl, combine the thickened cream and sugar, and whisk until well mixed. 2. Add the vanilla and eggs, whisking until smooth. 3. Gently and slowly pour the custard over the Fillo Pastry, ensuring it seeps into all the cavities. #### Baking and Serving 1.
