Ingredients:
 β€’ 3 large oranges (or lemons)
 β€’ 2 tablespoons baking soda
 β€’ Sugar (as needed)
 β€’ Water

Instructions
 1. Cleaning the Oranges:
 β€’ Rub the oranges dry with baking soda to remove any residues.
 β€’ Fill a bowl with warm water, add some baking soda, and wash the oranges thoroughly.
 β€’ Let them soak for 5-10 minutes, rinse with plain water, and dry with a cloth.
 2. Peeling and Preparing the Orange Peels:
 β€’ Cut off both ends of the oranges.
 β€’ Score the peel vertically into 5-6 sections. Carefully remove the peel from each section.
 β€’ Squeeze the oranges to extract the juice – from 3 oranges, you will get about 1/2 cup (4 ounces) of juice.
 3. Boiling the Peels:
 β€’ Add 4 cups (1 quart) of water to a pot and bring it to a boil.
 β€’ Add the orange peels, cover, and simmer for 8-10 minutes.
 β€’ Transfer the boiled peels to a bowl of cold water and let them cool.
 4. Removing the White Pith:
 β€’ Use a knife to carefully scrape off the white pith from the inside of the peels. This step ensures the peels won’t be bitter.
 β€’ Cut the peels into thin strips, about 1/4 inch wide.
 5. Making the Syrup:
 β€’ Pour the 1/2 cup of fresh orange juice into the pot.
 β€’ Add 1 to 1 1/4 cups of sugar (adjust based on your preference) and stir until dissolved.
 β€’ Add 1 1/2 cups (12 ounces) of water and the prepared orange peel strips.
 β€’ Stir gently, cover, and bring the mixture to a boil.
 β€’ Once it boils, reduce the heat to low and simmer uncovered until the syrup thickens and the peels become translucent, about 45-60 minutes.
 6. Drying the Peels:
 β€’ Arrange the candied peels on a wire rack, ensuring they don’t touch each other.
 β€’ Let them dry at room temperature for 6-8 hours.
 β€’ Alternatively, place them in the oven at 170Β°F (or the lowest possible temperature) for about 1 hour.
 7. Coating in Sugar:
 β€’ Once completely dry, roll the orange peels in granulated sugar to coat all sides evenly.

Storage and Serving:
 β€’ Store the candied orange peels in an airtight container in the refrigerator.
